Title:   Chewy Walnut Brownies

Ingredients:  
1 pckg. (12 oz.) vegan chocolate chips
1/4 c vegan margarine- like Earth Balance
2/3 c walnuts
3 medium bananas- peeled and cut into 2-inch pieces
1 t pure vanilla extract
1 1/2 c whole-wheat pastry flour
1 c raw sugar or other sweetener
1/2 t baking powder
1/2 t sea salt
Directions:   1. Preheat oven to 350F. In the top of a double-boiler, combine vegan chocolate chips and margarine, and heat until thoroughly melted. In a food processor, place walnuts and pulse several times to finely chop. Transfer chopped walnuts to a small bowl and set aside. Place bananas and vanilla extract in the food processor, process for 2 minutes, scrape down the sides of the container, and process an additional minute to form a light and creamy puree. Set aside.

2. In a large bowl, stir together whole wheat pastry flour, sugar, baking powder and sea salt. Add banana puree to dry ingredients, and stir well to combine. Add melted chocolate-chip mixture, and stir well to thoroughly combine.

3. Using olive oil, lightly oil the bottom only of a 9x13-inch pan. Pour batter into the pan, sprinkle reserved chopped walnuts over top, and press them in gently with your hands. Bake for 30 to 40 minutes or until center is set. Allow to cool completely, at least 1 hour, before cutting into 12 squares.
