Title:   Italian Tempeh Meatball Sandwiches

Ingredients:  
1/2 c onions- diced
1 T olive oil
1 T garlic- minced
1 t dried basil
1 t dried oregano
1 t sea salt
1/4 t freshly ground black pepper
1 can (28 oz.) crushed tomatoes
1 batch Sammy's Spicy Tempeh Sausages
Olive oil
6 submarine rolls- or other soft rolls
Shredded vegan soy mozzarella-style cheese- or other vegan cheese
Directions:   1. Preheat oven to 400F. Saute onions in olive oil in a medium saucepan for 3 minutes to soften. Add garlic and saute an additional minute, stirring constantly, until fragrant but not browned. Add basil, oregano, sea salt, and black pepper; sate an additional 30 seconds. Add crushed tomatoes, stir well to combine, reduce heat to low, and simmer mixture for 10 minutes to blend flavors.

2. Prepare Sammy's Spicy Tempeh Sausages mixture according to the recipe instructions. Using olive oil, lightly oil a cookie sheet and set aside. Using your hands or a small scoop, shape tempeh sausage mixture into 1 1/4-inch balls, and place them on the prepared cookie sheet. Using your fingers, rub a little olive oil over the top of each "meatball".

3. Bake for 25 to 30 minutes or until "meatballs" are dry to the touch and lightly browned on the outside. To assemble each sandwich: split open submarine roll, spoon a little of prepared sauce on bottom half, add 4 baked "meatballs", top with some additional sauce, and sprinkle a little vegan cheese over the top if using. Serve immediately.
