Title:   Potato Wheat Bread

Ingredients:  
1 medium potato
2 c potato water
1 T dry yeast
1/4 c warm water
2 T honey
2 t salt
2 T vegetable oil
6 c whole wheat pastry flour
Directions:   Peel and dice one medium potato. Place in a saucepan and cover with about 3 c water. Bring to a boil, then simmer until tender. Drain, saving 2 c potato water; set aside. Mash potato and set aside.

Dissolve yeast in 1/4 c warm water in a large bowl. Add potato water, mashed potato, honey, salt, oil and 2 c flour. Beat together for 5 minutes on low speed. Continue adding flour until dough can be handled for kneading. Turn onto lightly floured surface and knead into a smooth ball, about 5 minutes. Place in a greased bowl; cover and let rise until double in bulk (40 to 50 minutes). Punch down and knead again, about 5 minutes. Cover and let rise again (30 minutes). Divide dough in half, and shape into loaves. Brush the sides and bottom of 2 loaf pans with vegetable oil or spray with non-stick vegetable spray. Allow loaves to rise 30 minutes. Bake at 375F for 30 to 35 minutes.
